Instant Pot Beef Tips and Rice

So you bought a bunch of beef from your favorite, local rancher and you have these packages of stew meat you don’t know what to do with? Let me introduce you to Beef Tips and Rice! It’s the perfect, quick comfort food on a cold day. And what makes it even better is it takes approximately 30 minutes to come together in the ever loved Instant Pot.

During this time of year we are normally running between winter farm chores and taking the boys to ball practice. Thoughts of what to make for dinner usually escape me and next thing you know its 4pm and I still don’t have a clue what we will make for dinner. Times like these is when I pull out this quick comfort food recipe.

With less than 10 minutes of prep time and only 25 minutes of cooking time in the Instant Pot, you will have a hot meal in no time. Once I close the lid on the instant pot for the stew meat to cook, that’s when you start multi tasking and make your rice. In my experience, they usually get done at the same time.

I also choose to make a vegetable optional when I pull this recipe out because I need something I can throw in a bowl and go. However a nice side of broccoli or green beans made with our farm bacon is never hard for the boys to eat up with it.

I won’t make you scroll anymore by adding stories or extra ideas for such a simple recipe, so without further ado:

Instant Pot Beef Tips and Rice

Ingredients
  

  • 2 lb Beef Tips or Stew Meat cut into 1" cubes
  • 1 medium sweet yellow onion Diced fine
  • 2 tbsp olive or avocado oil
  • 4 cloves garlic diced
  • 2 cups beef broth
  • 1 bay leaf
  • 1 tsp thyme or 1 sprig of fresh thyme
  • 1/4 tsp oregano
  • 1/4 tsp parsley
  • 1/4 tsp basil
  • 2 tbsp Worcestershire
  • 3 tbsp corn starch
  • 3 tbsp water
  • salt and pepper
  • cooked rice

Instructions
 

  • Defrost and cut your beef tips or stew meat into 1" cubes.
  • Turn the Instant Pot to the sauce function on high. Add 1 tbsp of oil to the pot. Once the oil is hot, add your beef and sear. It's easier to do this is two batches to not over crowd the pot. Season with a little salt and pepper. Flip the beef after 2 minutes of searing. After another 2 minutes pull your beef out onto a plate and set aside. Put in your second batch of beef and repeat.
  • Add the other tbsp of oil to the pot (if needed) and add the diced onion. Once the onion is tender and translucent (about 5 minutes), add diced garlic cloves. Only cook the garlic for 30 seconds.
  • Add the beef back into the pot along with the broth, bay leaf, thyme, oregano, parsley, basil, and Worcestershire sauce.
  • Add lid and cook at high pressure for 25 minutes with a 10 minutes natural release.
  • Once the pressure has been released, mix together cornstarch and water. Add to the instant pot with the beef and turn the instant pot to the sauce function on high for 3-5 minutes. You are looking for the liquid to thicken and become gravy. Make sure to stir often to not burn the gravy.
  • Add on top of rice and serve with you favorite vegetable.
